1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 cups fresh or frozen corn

1 can (14 oz) diced green chilies

4 cups chicken broth

1 cup heavy cream

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Cook the Chicken: In a large pot, heat olive oil over medium heat. Add the chicken breasts and cook for about 7-8 minutes on each side until golden brown and cooked through. Remove from the pot and let cool. Once cool, shred the chicken with two forks.
