4 medium zucchinis

1 cup fresh basil leaves, packed

1 cup heavy cream (or coconut cream for a dairy-free option)

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)

Juice and zest of 1 large lemon

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Extra basil leaves, for garnish

Prepare the Zoodles: Using a spiralizer, turn the zucchinis into noodles (zoodles). If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set them aside.

    Make the Creamy Sauce: In a blender or food processor, combine the fresh basil leaves, heavy cream, grated Parmesan, lemon juice, lemon zest, and minced garlic. Blend until smooth and creamy. Add salt and pepper to taste, adjusting as needed.

      Cook the Zoodles: In a large skillet, heat olive oil over medium heat. Add the zoodles and sauté for about 2-3 minutes until they begin to soften but are still al dente. Avoid overcooking to maintain their texture.

        Combine: Pour the creamy lemon basil sauce over the cooked zoodles, tossing to coat them evenly. Cook for another minute until warmed through but not boiling.
