Ingredients

1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon lemon zest

1/4 cup fresh lemon juice (about 1-2 lemons)

1 cup vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 cup fresh parsley, chopped

Optional: Lemon wedges and extra Parmesan for serving

Instructions

Cook the Orzo: In a medium saucepan, bring a generous amount of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Prepare the Garlic Base: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, making sure not to let it brown.

Add Flavorings: Stir in the lemon zest and lemon juice, cooking for another minute to combine the flavors.

Create the Cream Sauce: Pour in the vegetable broth and cook for 2-3 minutes until slightly reduced. Reduce the heat to low, then add the heavy cream, stirring constantly until the sauce is heated through but not boiling.

Mix in the Cheese: Gradually add the grated Parmesan cheese, stirring continuously until melted and smooth. Season with salt and pepper to taste.

Combine Orzo and Sauce: Add the drained orzo to the creamy lemon garlic sauce, stirring gently until the orzo is well coated with the sauce. Allow it to cook on low for an additional 2-3 minutes to heat through.

Garnish and Serve: Remove from heat and stir in the chopped parsley. Serve warm, garnished with lemon wedges and extra Parmesan if desired.
