12 oz spaghetti or fettuccine

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 large lemon (zest and juice)

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh basil leaves, chopped (for garnish)

Freshly cracked black pepper (for serving)

Cook the Pasta:

    In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Sauce:

        In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant but not browned.

          Combine Ingredients:

            Reduce the heat to low, then add the ricotta cheese, grated Parmesan cheese, lemon juice, lemon zest, and red pepper flakes (if using). Stir well until the mixture is creamy and combined.

              Adjust the Consistency:

                Gradually add the reserved pasta water to the ricotta mixture, stirring continuously until you reach your desired sauce consistency. You may not need all the reserved water, so add it gradually.

                  Mix Pasta and Sauce:

                    Add the drained pasta to the skillet and toss to coat the pasta thoroughly with the creamy lemon ricotta sauce. Season with salt and pepper to taste.
