12 oz (340g) wide egg noodles or pasta of your choice

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 pound (450g) mixed mushrooms (such as shiitake, cremini, and button), sliced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup vegetable broth

1 cup sour cream or plant-based alternative

2 tablespoons soy sauce or tamari

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Aromatics:
