Creamy Roasted Carrot Soup

2 pounds of fresh carrots, peeled and chopped

1 medium onion, coarsely chopped

3 cloves of garlic, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste

4 cups vegetable or chicken broth

1 cup coconut milk (or heavy cream for a richer flavor)

1 tablespoon fresh lemon juice

Chopped fresh parsley or cilantro for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Carrots: In a large bowl, toss the chopped carrots, onion, and garlic with olive oil, cumin, coriander, salt, and pepper until well-coated. Spread them out on a baking sheet in a single layer and roast in the oven for about 25-30 minutes, or until the carrots are tender and slightly caramelized.

      Blend the Soup: Remove the roasted vegetables from the oven and transfer them to a large pot. Pour in the vegetable or chicken broth and bring it to a simmer over medium heat.

        Add the Coconut Milk: Once the soup is simmering, stir in the coconut milk. Use an immersion blender to puree the soup until it’s smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender, then return it to the pot.

          Finish the Soup: Stir in the fresh lemon juice and adjust the seasoning with additional salt and pepper if needed. If the soup is too thick, you can add more broth to reach your desired consistency.
