4 cups fresh corn kernels (about 6-8 ears of corn, or frozen corn)

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

8 ounces cream cheese, softened

1 cup Greek yogurt or sour cream

1 cup shredded sharp cheddar cheese

½ cup diced red bell pepper

2 green onions, finely chopped

¼ cup fresh cilantro, chopped (optional)

Juice of 1 lime

Tortilla chips or veggies for serving

Roast the Corn: Preheat your oven to 400°F (200°C). If using fresh corn, shuck the ears and slice off the kernels. On a baking sheet, toss the corn with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread evenly and roast for 20-25 minutes, stirring once halfway through, until the corn is golden and slightly charred.

    Mix the Base: In a large mixing bowl, combine the softened cream cheese and Greek yogurt (or sour cream). Mix until smooth and creamy, using a hand mixer or whisk.

      Combine Ingredients: To the cream cheese mixture, add the roasted corn (let it cool slightly), shredded cheddar cheese, diced red bell pepper, chopped green onions, lime juice, and cilantro if desired. Stir until everything is well combined.
