Creamy Spinach and Chicken Skillet Pasta

8 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 tbsp olive oil

3 cloves garlic, minced

5 oz fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and black pepper to taste

1/2 tsp red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Spinach: In the same skillet, add a little more olive oil if necessary. Add the minced garlic and sauté for about 30 seconds until fragrant. Then stir in the chopped spinach and cook until it wilts down, about 2-3 minutes.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well, scraping up any bits from the bottom of the pan. Gradually add in the grated Parmesan cheese, stirring continuously until melted and smooth. If the sauce is too thick, add in a bit of reserved pasta water until you reach your desired consistency.

          Combine Pasta and Chicken: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together until well coated in the creamy sauce. Cook on low for an additional 2-3 minutes to heat through.

            Serve: Adjust seasoning with extra salt, pepper, and red pepper flakes if using. Garnish with fresh basil leaves before serving. Plate the pasta and enjoy your hearty meal!
