12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

4 cups fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Increase the heat to medium-high and add the sliced mushrooms to the skillet. Sauté for 5-7 minutes until they are browned and tender.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

          Make the Sauce: Reduce the heat to medium. Pour in the heavy cream, stirring to combine everything. Add the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Allow the sauce to simmer for about 3-5 minutes until it thickens slightly.

            Combine Tortellini and Sauce: Gently fold the cooked tortellini into the creamy mushroom and spinach sauce, ensuring all the pasta is well coated. Allow it to warm through for another 2 minutes.
