To prepare the delightful filling for your creamy spinach and ricotta stuffed shells, start by taking a large mixing bowl. Begin by adding approximately 2 cups of chopped fresh spinach, which you can either sauté lightly or use raw, depending on your preference. If you choose to sauté, a quick cook in a pan with a little olive oil will enhance the spinach’s flavor while reducing its volume. Allow it to cool slightly before adding it to the bowl.

Ingredients

20 giant pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup grated Parmesan cheese

1 egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon nutmeg

2 cups marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta Shells: In a large pot of salted boiling water, cook the giant pasta shells according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Filling: In a large mixing bowl, combine chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, onion powder, salt, black pepper, and nutmeg. Mix thoroughly until well combined.

Fill the Shells: Take each cooked pasta shell and carefully fill it with the spinach and ricotta mixture, using a spoon or a piping bag to make it easier. Repeat until all shells are filled.

Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish to prevent sticking. Arrange the stuffed shells in a single layer over the sauce.

Top with Sauce & Cheese: Pour the remaining marinara sauce over the stuffed shells. Sprinkle the extra mozzarella cheese evenly on top.

Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it sit for 5-10 minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy!
