Creamy Sun-Dried Tomato Chicken Pasta

12 oz (340g) pasta (fettuccine or penne recommended)

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, sliced into strips

Salt and pepper to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes in oil, drained and chopped

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 cup (120ml) chicken broth

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

Fresh basil leaves for garnish

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips, season them with salt and pepper, and sauté until cooked through and golden brown, about 6-8 minutes. Remove the chicken from the skillet and set it aside.

      Prepare the Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Add the chopped sun-dried tomatoes, dried basil, and oregano, stirring to combine.

        Deglaze the Pan: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes to reduce slightly.

          Make it Creamy: Lower the heat and stir in the heavy cream, allowing it to warm through. As it thickens, add in the grated Parmesan cheese and stir until it is melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

            Combine Everything: Return the cooked chicken to the skillet and then toss in the drained pasta. Toss everything together until the pasta and chicken are evenly coated with the creamy sauce. Adjust seasoning with additional salt and pepper if necessary.
