2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 medium onion, chopped

2 garlic cloves, minced

4 cups vegetable broth

1 teaspoon ground cumin

½ teaspoon ground cinnamon

½ teaspoon salt (to taste)

¼ teaspoon ground black pepper (to taste)

1 cup coconut milk (or heavy cream for a richer flavor)

2 tablespoons maple syrup (optional, for added sweetness)

Fresh chives or parsley, for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until the onion is translucent. Stir in the minced garlic and cook for another minute, until fragrant.

    Cook the Sweet Potatoes: Add the diced sweet potatoes to the pot, stirring to combine. Cook for an additional 5 minutes, allowing the sweet potatoes to soften slightly.

      Add Spices and Broth: Pour in the vegetable broth, and then add the ground cumin, ground cinnamon, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender.

        Blend the Soup: Once the sweet potatoes are cooked, use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches, then return it to the pot.

          Make It Creamy: Stir in the coconut milk (or heavy cream). If you want a sweeter soup, mix in the maple syrup. Heat the soup gently over low heat for another 5 minutes, allowing the flavors to meld.

            Serve and Garnish: Ladle the creamy sweet potato soup into bowls and garnish with fresh chives or parsley for a pop of color & flavor.
