Ingredients

12 ounces pasta (penne or spaghetti)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 ounces) diced tomatoes (with juices)

1 cup heavy cream

1 cup fresh basil leaves, chopped (reserve a few for garnish)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

Freshly cracked black pepper for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Add Tomatoes: Pour in the canned diced tomatoes (with their juices) and stir. Let this simmer for about 2-3 minutes, allowing the flavors to meld together.

Make it Creamy: Reduce the heat to low and stir in the heavy cream. Mix well until the sauce becomes creamy and smooth.

Season the Sauce: Add the chopped basil, salt, black pepper, and red pepper flakes (if using). Stir until the basil wilts and everything is well-combined.

Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing everything together. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.

Finish with Cheese: Stir in the grated Parmesan cheese, mixing until melted and incorporated into the sauce. Taste and adjust seasoning as needed.

Serve: Divide the pasta into serving bowls, garnishing with additional fresh basil and a sprinkle of freshly cracked black pepper. Enjoy your creamy tomato basil pasta!
