Creamy Tomato Tortellini Skillet

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 cups vegetable broth

1 tablespoon Italian seasoning

1 package (9 oz) refrigerated cheese tortellini

1 cup heavy cream

1 cup spinach, fresh (or frozen, thawed)

½ cup Parmesan cheese, grated

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir well to combine. Add the Italian seasoning, and let the mixture come to a low simmer.

      Cook the Tortellini: Once the sauce is simmering, add the cheese tortellini to the skillet. Cook according to package instructions, usually about 5-7 minutes, stirring occasionally until the tortellini are tender.
