8 oz elbow macaroni (or gluten-free pasta)

1 cup raw cashews (soaked for at least 2 hours)

1 cup unsweetened almond milk (or any plant-based milk)

1/4 cup nutritional yeast

2 tbsp lemon juice

1 tsp garlic powder

1 tsp onion powder

1/2 tsp turmeric (for color)

1/2 tsp smoked paprika (optional, for a smoky flavor)

Salt and pepper to taste

1 tbsp olive oil (optional for added richness)

Fresh chives or parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain and set aside.

    Prepare the Creamy Sauce: In a high-speed blender, add the soaked cashews (drained), almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, smoked paprika, salt, and pepper. Blend on high until you achieve a completely smooth and creamy texture. This should take about 1-2 minutes.

      Combine Pasta and Sauce: In the same pot used for the pasta, add the cooked macaroni and the creamy sauce. Stir well to combine, ensuring that the pasta is evenly coated in the sauce.

        Heat the Mixture: Place the pot back on low heat, stirring occasionally, until everything is heated through. If the sauce is too thick, you can add a splash more almond milk to reach your desired consistency.
