1 pound ground turkey

1 cup shredded cheddar cheese

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned, drained)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

12 small flour tortillas

Cooking spray or olive oil

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Sauté the Aromatics: In a skillet over medium heat, add a splash of olive oil. Once hot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it up with a spatula. Season with chili powder, cumin, smoked paprika, salt, and black pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes.

        Mix in Remaining Ingredients: Remove the skillet from the heat and stir in the black beans and corn. Finally, fold in the shredded cheddar cheese until well combined.
