Crispy BBQ Chicken Quesadillas

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium red onion, thinly sliced

1 cup fresh corn kernels (canned or frozen)

1 tablespoon olive oil

4 large flour tortillas

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream and sliced jalapeños (for serving)

Prep the Chicken: In a large bowl, combine the shredded chicken and BBQ sauce. Mix well to coat the chicken evenly with the sauce. If desired, season with salt and pepper to taste.

    Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the red onion and sauté for 3-4 minutes, until softened. If using fresh corn, add it to the skillet and cook for an additional 2-3 minutes, until heated through. Remove from heat.

      Assemble the Quesadillas: On one half of each tortilla, layer the BBQ chicken, sautéed onions, corn, cheddar cheese, and Monterey Jack cheese. Fold the tortillas in half over the filling to create a half-moon shape.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place 1 or 2 quesadillas (depending on the size of your skillet) in the skillet. Cook for 3-4 minutes on one side, until golden brown and crispy, then carefully flip and cook for an additional 3-4 minutes on the other side.

          Slice and Serve: Once crispy and golden brown, remove the quesadillas from the skillet and let them rest for a minute. Cut each quesadilla into wedges and garnish with chopped cilantro.
