Ingredients

2 large sweet potatoes

3 tablespoons cornstarch

2 tablespoons olive oil

1 tablespoon Cajun seasoning (adjust to taste)

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into thin strips, about ¼ inch thick, to ensure they cook evenly.

Coat with Cornstarch: Place the sweet potato strips in a large bowl. Sprinkle the cornstarch over them and toss well to coat evenly. This will create that extra crispiness!

Add Oil and Seasoning: Drizzle the olive oil over the coated sweet potatoes. Then, add the Cajun seasoning, garlic powder, onion powder, smoked paprika, and salt. Toss again until the fries are completely coated in the spice mixture.

Spread on Baking Sheet: Spread the sweet potato fries in a single layer on the prepared baking sheet. Ensure they have enough space between them to allow airflow, which will help them crisp up.

Bake: Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through. Bake until they are golden brown and crispy on the edges. If you like them extra crispy, you can broil them for an additional 2-3 minutes at the end—just keep a close eye on them!

Serve: Remove from the oven and let them cool for a couple of minutes. Garnish with chopped fresh parsley, if desired, and serve hot with your favorite dipping sauce (like ranch or chipotle mayo). Enjoy!
