4 boneless, skinless chicken thighs

2 medium sweet potatoes, peeled and diced into 1-inch cubes

2 tablespoons olive oil, divided

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon dried thyme

Salt and pepper to taste

1 cup fresh broccoli florets

½ cup chicken broth

2 tablespoons honey

Fresh parsley, chopped, for garnish

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with smoked paprika, garlic powder, onion powder, thyme, salt, and pepper.

    Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, for about 10-12 minutes until they are soft and start to caramelize. Transfer them to a plate and set aside.

      Sear the Chicken: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the seasoned chicken thighs. Cook for about 5-7 minutes on each side or until they are golden brown and crispy. Remove the chicken from the skillet and set aside.

        Sauté Broccoli: In the same skillet, add the fresh broccoli florets. Sauté for about 3-4 minutes until they are vibrant and tender-crisp.

          Combine Ingredients: Return the sweet potatoes and chicken to the skillet. Pour in the chicken broth and drizzle with honey, allowing everything to simmer together for about 3-4 minutes to heat through and meld the flavors.

            Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm directly from the skillet for a beautiful presentation!
