4 large russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

½ teaspoon black pepper

1 teaspoon sea salt (adjust to taste)

¾ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Optional: ¼ teaspoon red pepper flakes (for a kick)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato in half lengthwise, then cut each half into wedges (about 6 wedges per potato).

      Soak the Potatoes: Place the cut wedges in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and contributes to crispiness.

        Dry the Wedges: After soaking, drain and thoroughly pat the potato wedges dry with a clean kitchen towel. Excess moisture can prevent them from becoming crispy.

          Season the Wedges: In a large bowl, combine the olive oil, minced garlic, garlic powder, onion powder, paprika, oregano, black pepper, and sea salt. Add the potato wedges and toss well to evenly coat them in the mixture.

            Add Parmesan: Once coated, sprinkle the grated Parmesan cheese over the wedges in the bowl and toss again until the wedges are fully covered in cheese.
