3 cups vegetable broth

1 small onion, finely chopped

2 cloves garlic, minced

1 medium carrot, grated

½ cup breadcrumbs (more if needed)

½ cup cooked quinoa (optional for added texture)

1 tsp cumin powder

1 tsp paprika

½ tsp chili powder (adjust to taste)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped

2 tablespoons fresh cilantro, chopped

2 tablespoons olive oil for frying

For the Herb Yogurt Dip:

1 cup plain Greek yogurt

2 tablespoons fresh dill, chopped

1 tablespoon fresh lemon juice

1 clove garlic, minced

Cook the Lentils: In a medium saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer until lentils are tender, about 20-25 minutes. Drain any excess liquid and let cool slightly.

    Prepare the Base: In a large mixing bowl, mash the cooked lentils with a fork or potato masher. Add the chopped onion, minced garlic, grated carrot, breadcrumbs, cooked quinoa (if using), cumin, paprika, chili powder, salt, pepper, parsley, and cilantro. Mix well until combined. If the mixture feels too wet, add more breadcrumbs until it holds together easily.
