Crispy Roasted Chickpea Tacos

2 cans (15 oz each) chickpeas, rinsed and drained

2 tbsp olive oil

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

8 small corn or flour tortillas

1 ripe avocado, diced

1 cup shredded red cabbage

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for serving

Instructions
 

Preheat oven: Preheat your oven to 400°F (200°C).

    Prepare chickpeas: Spread the rinsed and drained chickpeas on a clean kitchen towel and pat them dry to remove excess moisture. This step is crucial for getting them crispy.

      Season chickpeas: In a large bowl, combine the chickpeas with olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss well to ensure even coating.

        Roast chickpeas: Spread the seasoned chickpeas on a lined baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until the chickpeas are golden and crunchy.

          Warm tortillas: While the chickpeas are roasting, warm the tortillas in a skillet over medium heat for about 20-30 seconds on each side until soft and pliable.

            Assemble tacos: Once the chickpeas are crispy, remove them from the oven and let them cool for a few minutes. To assemble, place a small handful of shredded cabbage onto each tortilla, followed by a generous serving of roasted chickpeas, diced avocado, and a sprinkle of fresh cilantro.
