For the Chicken Bites:

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 large egg

1/2 cup cold sparkling water

Oil for frying

For the Sweet & Sour Sauce:

1/2 cup granulated sugar

1/3 cup apple cider vinegar

1/4 cup ketchup

2 tablespoons soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1/4 cup diced bell peppers (optional)

1/4 cup diced pineapple (optional)

For Garnish:

Chopped green onions

Sesame seeds

Instructions
 

Prepare the Chicken Bites:

    - In a mixing bowl, combine the flour, baking powder, garlic powder, paprika, salt, and pepper. Stir to combine.

      - In another bowl, whisk together the egg and cold sparkling water until well combined. Gradually add this to the flour mixture, stirring until smooth.

        - Preheat oil in a deep frying pan or Dutch oven to 350°F (175°C).

          Fry the Chicken:

            - Dip each chicken piece into the batter, allowing excess to drip off before carefully placing in the hot oil.

              - Fry the chicken in batches, about 5-6 pieces at a time, until golden brown and crispy (approximately 4-5 minutes). Use a slotted spoon to transfer the chicken onto paper towels to drain. Repeat until all chicken is cooked.

                Make the Sweet & Sour Sauce:

                  - In a saucepan over medium heat, combine the sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and ground ginger. Stir until sugar dissolves.

                    - Once the mixture comes to a simmer, stir in the cornstarch slurry. Cook until the sauce thickens (about 1-2 minutes).

                      - If using, add in the diced bell peppers and pineapple, and simmer for another minute.

                        Combine and Serve:

                          - In a large bowl, combine the crispy chicken bites with the sweet & sour sauce, tossing gently to coat.

                            - Transfer to a serving plate, and garnish with chopped green onions and sesame seeds.

                              Enjoy:
