Ingredients

2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup all-purpose flour

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into uniform sticks, about 1/4 inch thick.

Set Up Your Dipping Stations: In three separate shallow bowls, prepare the coating stations:

        - Bowl 1: Place the all-purpose flour.

          - Bowl 2: In this bowl, whisk the eggs until combined.

            - Bowl 3: Combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

              Coat the Zucchini:

                - First, dip each zucchini stick into the flour, making sure to coat it completely.

                  - Next, transfer it to the egg mixture, allowing any excess egg to drip off.

                    - Finally, roll the zucchini stick in the breadcrumb mixture, pressing lightly to ensure it adheres well.

Arrange on Baking Sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they are not overcrowded for the best crispiness.

Drizzle or Spray: Lightly drizzle olive oil or spray cooking spray over the coated zucchini fries to help them crisp up in the oven.

Bake: Bake for about 20–25 minutes, flipping halfway through, until the fries are golden brown and crispy.

Serve: Once done, remove the zucchini fries from the oven and allow to cool slightly before serving. They pair beautifully with marinara sauce or a zesty dipping sauce of your choice!
