Ingredients

For the Chicken and Vegetables:

2 lbs boneless, skinless chicken thighs, cubed

1 cup carrots, sliced

1 cup celery, chopped

1 cup onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup frozen peas

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

1/4 cup heavy cream (optional, for richness)

For the Dumplings:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/2 cup milk

1/4 cup sour cream

1/4 cup melted butter

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken Mixture: In a large crockpot, add the cubed chicken thighs, sliced carrots, chopped celery, diced onion, minced garlic, and frozen peas.

Season: Pour in the chicken broth and season with thyme, rosemary, salt, and pepper. Stir well to combine all the ingredients.

Cook: Cover the crockpot and set it to low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.

Make the Dumpling Batter: About 30 minutes before serving, in a mixing bowl, whisk together the flour, baking powder, and salt. In another bowl, combine the milk, sour cream, and melted butter until smooth. Gradually fold the wet ingredients into the dry, mixing just until combined.

Form the Dumplings: Using a spoon, drop spoonfuls of the dumpling batter directly onto the chicken and broth mixture in the crockpot, creating small mounds.

Cook the Dumplings: Cover the crockpot again and cook on high for an additional 30-45 minutes, or until the dumplings have risen and are cooked through (they should be fluffy and no longer doughy in the center).

Optional Creaminess: For a richer broth, stir in 1/4 cup of heavy cream before serving.

Serve: Once the dumplings are ready, give the mixture a gentle stir and ladle the chicken and dumplings into bowls. Garnish with fresh parsley for a pop of color.
