Crockpot Chicken Pumpkin Chili

1 lb boneless, skinless chicken breasts, diced

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, undrained

1 medium onion, chopped

2 cloves garlic, minced

1 cup chicken broth

1-2 tablespoons chili powder (adjust to taste)

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon ground cinnamon

Salt and pepper to taste

1 cup corn (frozen or fresh)

Optional toppings: Sour cream, shredded cheese, avocado, fresh cilantro

Instructions
 

Prepare the Chicken: Start by dicing the chicken breasts into bite-sized pieces. Season with salt and pepper to taste.

    Chop Vegetables: Dice the onion and mince the garlic. Set them aside.

      Layer Ingredients: In the crockpot, add the diced chicken, chopped onion, minced garlic, pumpkin puree, black beans, kidney beans, diced tomatoes (with juice), chicken broth, corn, chili powder, cumin, smoked paprika, and ground cinnamon.

        Mix Well: Stir all the ingredients together until well combined. Make sure the spices are evenly distributed throughout the mixture.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The flavors will meld beautifully, and the chicken will be tender.

            Shred Chicken: About 30 minutes before serving (if cooking on low), remove the chicken pieces using a slotted spoon, shred them with two forks, and return them to the chili. If using high heat, shred the chicken and let it cook for the remaining time without the lid for a thicker consistency.

              Taste and Adjust: Before serving, taste the chili and adjust seasoning if necessary. Add more chili powder for spiciness or more salt to bring out the flavors.

                Serve: Ladle the chili into bowls, and allow everyone to top their servings with sour cream, shredded cheese, avocado, and fresh cilantro as desired.
