2 medium cucumbers, peeled and finely grated

1 ½ cups plain Greek yogurt

1 cup sour cream

2 cloves garlic, minced

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon lemon juice (freshly squeezed for best flavor)

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon olive oil

Optional: pinch of cayenne pepper for a hint of spice

Start by peeling the cucumbers. Grate them finely using a box grater or a food processor. Once grated, sprinkle with a little salt and let them sit in a colander for about 10 minutes to draw out excess moisture.

    While the cucumbers are draining, in a large bowl, combine the plain Greek yogurt and sour cream. Stir until smooth and creamy.

      Add the minced garlic, fresh dill, lemon juice, salt, black pepper, and olive oil to the yogurt mixture. Stir well to combine all the ingredients. If you like a little heat, add a pinch of cayenne pepper.

        After the cucumbers have drained, use a clean kitchen towel or paper towels to gently squeeze out any remaining moisture. This step is crucial to ensure your dip remains thick and doesn't become watery.

          Fold the drained cucumbers into the yogurt mixture until fully incorporated.

            Transfer the cucumber yogurt mixture into your crockpot. Set the crockpot to low and let it warm for about 30 minutes. This allows the flavors to meld without cooking the dip.

              After 30 minutes, turn off the crockpot and let the dip cool slightly before serving. For best results, transfer to a serving bowl and refrigerate for at least 1 hour before serving, to allow flavors to develop even further.
