12 oz pasta (penne or rotini works great)

1 cup pumpkin puree (canned or fresh)

2 cups vegetable broth

1 cup heavy cream or coconut cream for a vegan option

1 medium onion, diced

3 cloves garlic, minced

1 tsp dried sage

1 tsp dried thyme

½ tsp nutmeg

Salt and pepper to taste

½ cup grated Parmesan cheese (omit for vegan)

Fresh parsley, chopped (for garnish)

Instructions
 

Preparation: Begin by dicing the onion and mincing the garlic. Set them aside for use in the slow cooker.

    Combine Ingredients: In a large crockpot, combine the pumpkin puree, vegetable broth, heavy cream, diced onion, minced garlic, sage, thyme, nutmeg, salt, and pepper. Stir well until fully combined.
