2 ripe avocados

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp chili powder

1/2 tsp cumin

Salt and pepper, to taste

4 small tortillas (corn or flour)

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup diced red onion

1/2 cup crumbled feta cheese or dairy-free cheese

1/4 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: Hot sauce or your favorite salsa

Instructions
 

Prep the Avocados: Cut the avocados in half, remove the pits, and spoon the flesh out. Slice each half into thick wedges.

    Season the Panko: In a bowl, combine the panko breadcrumbs, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well to ensure even seasoning.

      Coat the Avocado: Take each avocado wedge and gently coat it in the breadcrumb mixture, pressing lightly to adhere the crumbs to the surface. Set aside.

        Air Fry the Avocado: Preheat your air fryer to 385°F (195°C). Place the coated avocado wedges in the air fryer basket in a single layer, ensuring they are not overcrowded. Air fry for 8-10 minutes until golden brown and crispy, flipping halfway through.

          Assemble the Tacos: While the avocado is frying, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.

            Layer the Ingredients: To each tortilla, layer shredded lettuce, crispy avocado wedges, diced tomatoes, and red onion. Sprinkle feta cheese and chopped cilantro on top.

              Serve: Squeeze fresh lime juice over the tacos and add hot sauce or salsa if desired. Serve immediately while everything is warm and crispy.
