2 medium zucchinis

1 cup Panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional for extra heat)

Salt and black pepper to taste

2 large eggs

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Wash the zucchinis and slice them into thin rounds, about 1/8-inch thick. Try to keep them as uniform as possible for even cooking.

      In a medium bowl, combine the Panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to ensure all the dry ingredients are evenly distributed.

        In another bowl, beat the eggs and add the olive oil. Whisk until well combined.

          Dip each zucchini slice into the egg mixture, allowing any excess to drip off, then coat it with the breadcrumb mixture. Press gently to ensure the breadcrumbs adhere to the zucchini.

            Place the coated zucchini slices in a single layer on the prepared baking sheet; avoid overcrowding, as this can cause them to steam instead of crisp.

              Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the chips are golden brown and crispy.

                Remove from the oven and let them cool for a few minutes before serving. This will help them become even crunchier.
