1 cup corn (fresh, frozen, or canned)

1 teaspoon cumin

1/2 teaspoon chili powder

1 cup cherry tomatoes, diced

1/2 cup red onion, finely chopped

1 cup shredded cheese (cheddar or a Mexican blend)

12 small corn tortilla cups (store-bought or homemade)

1 ripe avocado, diced

Fresh cilantro for garnish

Sour cream or Greek yogurt for serving (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) if you prefer to warm the tortilla cups.
