Ingredients

2 cups cooked chicken, shredded (feel free to use rotisserie chicken for convenience)

½ cup buffalo sauce (adjust spiciness to taste)

1 cup sharp cheddar cheese, shredded

1 cup romaine lettuce, chopped

½ cup diced tomatoes

½ cup blue cheese dressing (or ranch if you prefer)

4 large flour tortillas

1 tablespoon olive oil (for crisping tortillas)

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Instructions

Mix the Chicken: In a mixing bowl, combine the shredded chicken with buffalo sauce, stirring until all chicken is evenly coated. If you like it spicier, add more buffalo sauce to taste.

Prepare the Wrap Filling: In another bowl, combine the chopped romaine lettuce, diced tomatoes, and half of the cheddar cheese. Drizzle with a little blue cheese dressing and toss lightly to mix.

Assemble the Wrap: Lay a tortilla flat on a clean surface. In the center of the tortilla, layer a generous scoop of the buffalo chicken mixture (about 1 cup), followed by a handful of the lettuce mixture. Sprinkle more cheddar cheese on top if desired, and drizzle with additional dressing.

Fold the Tortilla: Fold the sides of the tortilla towards the center, then roll it up from the bottom, tucking in as you go to secure the filling inside. Make sure the wrap is tightly closed.

Crisp the Wrap: In a large skillet, heat the olive oil over medium heat. Place the wraps seam-side down in the skillet. Cook for about 4-5 minutes until golden brown, then carefully flip and cook the other side until crispy and golden.

Serve: Remove the wraps from the skillet and let them cool for a minute. Cut in half diagonally, garnish with fresh cilantro if desired, and serve with extra blue cheese or ranch dressing on the side.
