2 cups mixed nuts (almonds, pecans, walnuts, cashews)

1 cup rolled oats

1/3 cup maple syrup

1/4 cup honey (or agave syrup for a vegan option)

1/2 teaspoon sea salt

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 cup dried cranberries or raisins (optional)

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the mixed nuts, rolled oats, sea salt, and ground cinnamon. Stir until everything is evenly distributed.

      Prepare Wet Mixture: In a small saucepan, over low heat, mix the maple syrup, honey (or agave), and vanilla extract. Stir until warmed and combined but not boiling.

        Combine Mixtures: Pour the warm syrup mixture over the dry nut and oat mixture. Stir well until all the dry ingredients are evenly coated.

          Add Extras: If using, fold in the dried cranberries or raisins and dark chocolate chips into the mixture.

            Shape Clusters: Scoop tablespoon-sized handfuls of the mixture and drop them onto the prepared baking sheet. Flatten them slightly to ensure they hold their shape during baking.
