Crunchy Zesty Chickpea Salad

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 avocado, diced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

Juice of 2 limes

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup toasted sunflower seeds (for crunch)

Instructions
 

In a large mixing bowl, combine the chickpeas, diced cucumber, bell pepper, cherry tomatoes, red onion, and avocado. Gently toss to mix the ingredients evenly.

    In a separate small bowl, whisk together the olive oil, lime juice, cumin, smoked paprika, salt, and pepper until well combined.

      Pour the dressing over the chickpea mixture. Toss gently to ensure all ingredients are coated with the dressing.

        Add the chopped parsley and feta cheese (if using) to the salad. Mix lightly.
