1 lb (450g) boneless, skinless chicken breast

8 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 cup kale, stems removed and chopped

1 cup zucchini, diced

1 teaspoon fresh ginger, grated

1 teaspoon turmeric powder

1 teaspoon dried thyme

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Vegetables: Stir in the sliced carrots and chopped celery, and continue to sauté for another 5 minutes to soften the vegetables.

      Cook the Chicken: Pour in the chicken broth and add the boneless chicken breast. Bring the mixture to a gentle boil. Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is cooked through.

        Shred the Chicken: Once cooked, remove the chicken breast from the pot and let it cool slightly. Using two forks, shred the chicken into bite-sized pieces.

          Add Remaining Ingredients: Return the shredded chicken to the pot. Add zucchini, kale, turmeric, thyme, the bay leaf, and season with salt and pepper. Simmer for an additional 10-15 minutes until the veggies are tender.

            Finish with Lemon: Stir in the fresh lemon juice and adjust seasoning if necessary. Remove the bay leaf before serving.
