1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juices)

1 cup beef broth

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro or green onions for garnish (optional)

Sour cream and shredded cheese for serving (optional)

Instructions
 

Sauté Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 3-4 minutes until they begin to soften. Add minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Beef: Increase the heat to medium-high, and add the ground beef to the pot. Cook for about 5-6 minutes, breaking it up with a wooden spoon until fully browned. Drain any excess fat if necessary.
