8 ounces rotini or penne pasta

6 slices of crispy bacon, chopped

1 cup cherry tomatoes, halved

1 cup Romaine lettuce, chopped

1/2 cup red onion, finely diced

1/2 cup mayonnaise

1 tablespoon Dijon mustard

2 teaspoons apple cider vinegar

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cool water to stop the cooking process. Set it aside.

    Cook the Bacon: In a medium skillet over medium heat, cook the chopped bacon until crispy. This should take about 5-7 minutes. Once cooked, remove from the skillet and drain on paper towels.
