Easy Cheesy Broccoli and Rice Casserole

2 cups uncooked rice (long grain or jasmine)

4 cups broccoli florets (fresh or frozen)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese (plus extra for topping)

1 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

1 cup breadcrumbs (optional, for added crunch)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium pot, cook the rice according to package instructions. Typically, this means bringing water to a boil and then simmering until tender, about 15-20 minutes. Once cooked, set aside.

      Prepare the Broccoli: If using fresh broccoli, steam the florets for 5-6 minutes until just tender. If using frozen, simply thaw them in the microwave or hot water for a few minutes. Drain and set aside.

        Mix the Base: In a large mixing bowl, combine the cream of mushroom soup, milk, garlic powder, onion powder, salt, and black pepper. Whisk well until smooth and fully combined.

          Combine Ingredients: Add the cooked rice, broccoli florets, and 1 cup of shredded cheddar cheese to the soup mixture. Stir until everything is well coated.

            Transfer to Baking Dish: Lightly grease a 9x13 inch baking dish with olive oil. Pour the broccoli and rice mixture into the dish, spreading it evenly.

              Add Topping: If using breadcrumbs for crunch, sprinkle them evenly over the casserole. Then, top with additional shredded cheddar cheese for that gooey finish.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden, and the edges are slightly crispy.

                  Garnish & Serve: Remove from the oven and let it sit for 5 minutes before serving. If desired, garnish with chopped fresh parsley for a pop of color.
