1 zucchini, diced

1 bell pepper (red or yellow), diced

1 cup green beans, trimmed and cut into bite-sized pieces

1 can (14.5 oz) diced tomatoes, with juices

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

1 tablespoon lemon juice (optional)

For the Cheesy Toasties:

4 slices of your favorite bread (sourdough, whole grain, or white)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

1 tablespoon butter, softened

1 teaspoon dried oregano or Italian seasoning

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until the onion becomes translucent.

    Add Root Vegetables: Stir in the diced carrots, celery, and potato. Cook for about 5 minutes, stirring occasionally.
