Family-Friendly Vegetable Quesadillas with Avocado

4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup corn kernels (fresh or frozen)

1 cup chopped bell peppers (any colors)

1 cup chopped zucchini

1 cup chopped spinach

1 ripe avocado, sliced

1 teaspoon cumin

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Sour cream or Greek yogurt (for serving)

Salsa (for serving)

Instructions
 

Prep the Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped bell peppers, zucchini, and corn. Sauté for about 5-7 minutes until the vegetables are slightly softened.

    Add Spinach and Seasoning: Stir in the chopped spinach, cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes until the spinach is wilted. Remove the skillet from heat and set aside.

      Assemble the Quesadillas: Preheat a separate non-stick skillet over medium heat. Take one tortilla and sprinkle a generous amount of the cheddar and mozzarella cheese evenly over half of the tortilla.

        Layer on the Veggies: On top of the cheese, add a portion of the sautéed vegetable mixture. Then, place a few slices of avocado over the veggies. Fold the tortilla in half, covering the filling.

          Cook the Quesadilla: In the preheated skillet, cook the folded quesadilla for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining tortillas.

            Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges and serve with sour cream or Greek yogurt and salsa on the side for dipping.
