Fluffy Orange Cranberry Muffins

2 cups all-purpose flour

1 cup fresh cranberries, chopped (or dried cranberries)

3/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

3/4 cup buttermilk (or milk with 1 tablespoon lemon juice or vinegar)

Zest of 1 large orange

2 large eggs

1 teaspoon vanilla extract

1/2 cup orange juice (freshly squeezed is best)

Optional: 1/4 cup coarse sugar for topping

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.

    Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, chopped cranberries, granulated sugar, baking powder, baking soda, and salt. Make sure the cranberries are well-coated with flour to prevent them from sinking.

      Mix the Wet Ingredients: In a separate bowl, combine the melted butter, buttermilk, orange zest, eggs, vanilla extract, and orange juice. Whisk until everything is well blended.

        Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold until just combined. Be careful not to overmix; some lumps are okay for fluffy muffins!

          Fill the Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If desired, sprinkle a little coarse sugar on top of each muffin for a crunchy finish.
