Ingredients

2 ripe avocados

1 can (5 oz) of tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt (optional for creaminess)

1 tablespoon Dijon mustard

Juice of 1 lime

1 small celery stalk, finely chopped

2 green onions, finely chopped

1 tablespoon fresh cilantro or parsley, chopped

Salt and pepper to taste

Cherry tomatoes, halved (for garnish)

Optional: Sliced radishes or microgreens for garnish

Instructions

Prepare the Avocados: Cut the avocados in half lengthwise and remove the pit. Carefully scoop out a little of the flesh to create a larger boat for the filling, but be careful not to break the skin. You can set the scooped-out flesh aside for later use (like guacamole).

Make the Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt (if using), Dijon mustard, lime juice, chopped celery, green onions, and fresh herbs. Mix thoroughly until the ingredients are well incorporated. Season with salt and pepper to taste.

Assemble the Boats: Spoon the tuna mixture generously into each avocado half, filling them to the brim.

Garnish and Serve: Top each tuna boat with halved cherry tomatoes and scatter some sliced radishes or microgreens over them for an extra burst of color and nutrition.

Enjoy Cold or at Room Temperature: Serve immediately as a light lunch, snack, or party appetizer!
