Ingredients

2 cups rolled oats

½ cup almond butter (smooth)

¼ cup honey or maple syrup (for a vegan option)

¼ cup shredded coconut (unsweetened)

½ cup mini chocolate chips (dairy-free if desired)

¼ cup chopped nuts (almonds or walnuts work great)

½ teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Baking Sheet: Line a baking sheet with parchment paper or a silicone mat to prevent sticking.

Mix Wet Ingredients: In a medium-sized bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until well mixed and smooth.

Combine Dry Ingredients: In a large bowl, mix the rolled oats, shredded coconut, chopped nuts, and a pinch of salt until evenly distributed.

Combine Wet and Dry Mixtures: Pour the wet almond butter mixture over the dry oat mixture. Stir well until all the dry ingredients are fully coated and combined. If the mixture feels too dry, add a little more almond butter or honey until it holds together well.

Add Chocolate Chips: Gently fold in the mini chocolate chips, making sure they’re evenly distributed throughout the mixture.

Form Clusters: Using your hands or a scoop, grab portions of the mixture and squeeze them together to form clusters. Place them onto the prepared baking sheet, leaving some space between each cluster to allow for freezing.

Freeze Clusters: Once all the clusters are formed, place the baking sheet in the freezer for at least 1-2 hours, or until the clusters are completely frozen and firm.

Store and Enjoy: Transfer the frozen clusters to an airtight container or freezer bag for long-term storage. Enjoy them straight from the freezer as a crunchy, healthy snack!
