Frozen Cherry Chocolate Oat Bars

Ingredients
  

For the Base:

1 ½ cups rolled oats

1 cup almond flour (or any nut flour)

1/2 cup coconut oil, melted

1/4 cup maple syrup or agave nectar

1/4 teaspoon sea salt

1 teaspoon vanilla extract

For the Cherry Layer:

2 cups frozen cherries, thawed and roughly chopped

2 tablespoons honey or agave syrup

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Chocolate Drizzle:

1/2 cup dark chocolate chips

1 tablespoon coconut oil

Instructions
 

Prepare the Base:

    - In a large mixing bowl, combine rolled oats, almond flour, melted coconut oil, maple syrup, sea salt, and vanilla extract. Stir until the mixture is well combined and resembles a thick dough.

      Assemble the Base:

        - Line an 8x8 inch (or similar size) baking pan with parchment paper, leaving some overhang for easier removal later. Press the oat mixture into the bottom of the pan in an even layer. Use the back of a measuring cup or your fingers to pack it tight.

          Make the Cherry Filling:

            - In a medium saucepan over medium heat, combine the chopped cherries, honey (or agave), lemon juice, and cornstarch. Cook for about 5-7 minutes, stirring occasionally until the mixture thickens and becomes syrupy. Remove from heat, and allow to cool for a few minutes.

              Layer the Cherry Filling:

                - Pour the cooled cherry mixture over the pressed oat base in the pan. Spread it evenly with a spatula.

                  Freeze the Bars:

                    - Cover the baking pan with plastic wrap and place it in the freezer. Freeze for at least 2 hours or until firm.

                      Prepare the Chocolate Drizzle:

                        - While the bars are freezing, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and fully melted.

                          Drizzle with Chocolate:

                            - Once the bars are ready, remove them from the freezer. Use the parchment paper overhang to lift the bars out of the pan. Place them on a cutting board and drizzle the melted chocolate over the top. Allow it to set for a few minutes.

                              Cut and Serve:

                                - Once the chocolate has hardened slightly, cut the bars into squares or rectangles. Serve immediately or store them in an airtight container in the freezer.
