Ingredients

2 ripe mangoes, peeled and diced

1 cup pineapple chunks (fresh or canned with juice)

1/2 cup coconut milk (full-fat for creaminess)

2 tablespoons honey or agave syrup (adjust based on sweetness preference)

1 tablespoon lime juice (freshly squeezed)

Pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

In a blender, combine the diced mangoes, pineapple chunks, coconut milk, honey (or agave syrup), lime juice, and a pinch of salt.

Blend on high speed until completely smooth and creamy, scraping down the sides as necessary to incorporate all ingredients thoroughly.

Taste the mixture and adjust sweetness or acidity by adding more honey or lime juice, if desired.

Pour the blended mixture into popsicle molds, leaving a small amount of space at the top for expansion during freezing.

If desired, add mint leaves to each mold for a refreshing burst of flavor.

Insert wooden sticks or lids into the molds, ensuring they are centered and secure.

Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

To release the popsicles, run warm water over the outside of the molds for a few seconds or let them sit at room temperature for a minute, then gently pull them out.
