4 ripe peaches, peeled and chopped

1 cup Greek yogurt (plain or vanilla)

1 cup coconut cream (canned)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

1/2 cup granola (for topping, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Peaches: Start by peeling and chopping the ripe peaches into small pieces. If you prefer, you can reserve a few slices for garnishing later.

    Blend the Mixture: In a blender or food processor, combine the chopped peaches, Greek yogurt, coconut cream, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste the mixture and adjust sweetness if necessary.

      Pour into a Pan: Line an 8x8-inch (or equivalent) baking dish with parchment paper. Pour the peach and cream mixture into the lined dish, spreading it evenly with a spatula.

        Freeze: Place the baking dish in the freezer for about 4 hours, or until the mixture is firm.

          Slice into Bars: Once completely frozen, remove the dish from the freezer. Lift the mixture out of the dish using the parchment paper. Place it on a clean cutting board and slice it into rectangles or squares, as desired.

            Serve: Transfer the frozen bars to a plate. If desired, sprinkle granola on top for added crunch and garnish with fresh mint leaves for a pop of color. Optionally, decorate with the reserved peach slices.

              Store: If you have leftover bars, simply place them in an airtight container, separating layers with parchment paper to prevent sticking. Return them to the freezer to enjoy later!
