Ingredients
  

2 cups fresh or frozen peaches, diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup coconut milk (canned or carton)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Juice of 1 lemon

1/4 teaspoon salt

1/2 cup granola or crushed nuts (optional, for topping)

Instructions
 

Prep the Peaches: If using fresh peaches, wash, peel, and dice them. If using frozen, ensure they are slightly thawed for easier blending.

    Blend Ingredients: In a blender or food processor, combine the peaches, Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, lemon juice, and salt. Blend until smooth and creamy, scraping down the sides as needed.

      Taste and Adjust: Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup. Blend again for a few seconds.

        Prepare the Molds: Pour the peach mixture evenly into silicone ice cream bar molds. Leave a little space at the top to allow for expansion when freezing.

          Insert Sticks: If your molds have a slot for sticks, place them in now. If not, freeze for about 1-2 hours until slightly firm before adding sticks.

            Freeze: Place the molds in the freezer for at least 4-6 hours or until completely frozen.

              Unmold the Bars: To remove the bars, run the outside of the molds under warm water for a few seconds to loosen them. Carefully pull them out.

                Optional Topping: If desired, dip the bars in warm melted chocolate and roll them in granola or crushed nuts for added crunch.

                  Serve: Enjoy immediately or store the bars in an airtight container in the freezer for up to two weeks.
