Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

¾ cup powdered sugar

1 tsp vanilla extract

1 cup heavy cream

1 cup fresh strawberries, pureed (plus extra for garnish)

For the topping:

½ cup fresh strawberries, sliced

Mint leaves (for garnish)

Instructions

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer. Refrigerate while you prepare the filling.

Mix the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Add the strawberry puree: Gently fold the strawberry puree into the cream cheese mixture until evenly combined, creating a beautiful pink color.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the strawberry cheesecake mixture until fully incorporated and fluffy.

Assemble the bars: Pour the cheesecake filling over the chilled crust, spreading it evenly with a spatula. Tap the dish gently on the counter to remove any air bubbles. Cover the top with plastic wrap and freeze for at least 4 hours or until fully solid.

Serve: Once frozen, remove the cheesecake bars from the dish by lifting them out using the edges of the parchment paper (if used). Cut into squares. Arrange the sliced strawberries on top of each bar and garnish with mint leaves.

Enjoy: Serve immediately or return the bars to the freezer until ready to serve. Enjoy the delightful flavor of strawberry cheesecake on a warm day!
