Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

A pinch of salt

Optional: 1/4 cup granola or chopped nuts for texture

Instructions

Prepare the Strawberries: In a blender or food processor, place the sliced strawberries. Blend until smooth, but leave some small chunks for texture if desired. Reserve a few slices for garnish if you like.

Mix the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Whisk until the mixture is smooth and creamy.

Combine Mixtures: Gently fold the blended strawberries into the yogurt mixture, ensuring the strawberries are evenly distributed. If using, fold in the granola or chopped nuts at this stage for added texture.

Prepare the Molds: Pour the mixture into ice pop molds or a parchment-lined 9x5 inch loaf pan. If desired, lay the reserved strawberry slices on top for a decorative touch.

Freeze: Place the molds or loaf pan in the freezer and let it freeze for at least 4-6 hours, or until completely solid.

Serve: To remove the bars from the molds, let them sit at room temperature for a few minutes or briefly run under warm water. If using a loaf pan, pull the bars out using the parchment paper and cut into bars. Enjoy your refreshing frozen treats!

Storage: Store any leftovers in an airtight container in the freezer for up to 2 weeks.
