2 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

2 cups whipped cream (store-bought or homemade)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon lemon juice

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, granulated sugar, and vanilla extract. Mix well and let sit for about 15 minutes to allow the strawberries to release their juices.

    Make the Crust: In a separate bowl, mix together the graham cracker crumbs and melted butter until well combined. Press this mixture into the bottom of an 8x8 inch baking dish to form an even layer. Place it in the freezer for about 20 minutes to set.

      Mix the Cream Layer: In a large mixing bowl, whisk together the softened cream cheese and powdered sugar until smooth. Fold in the whipped cream gently until fully combined, taking care not to deflate the mixture. Add the lemon juice and mix until just combined.

        Assemble the Bars: Remove the crust from the freezer. Spread half of the cream mixture over the crust, smoothing it out evenly. Then, layer the marinated strawberries over the cream layer. Pour the remaining cream mixture on top and spread it out evenly.

          Freeze: Cover the dish with plastic wrap and place it in the freezer for at least 4 hours, or until completely firm.

            Serve: Once fully frozen, remove the strawberry shortcake bars from the dish using a sharp knife dipped in warm water for easy cutting. Cut into bars, serve, and enjoy the refreshing layers of strawberry and cream!
